I wouldn't use this spray for baking because traditional PAM is a better price, but there are a few applications where this is essentially: fried eggs and broiling. The oils in this type have a higher smoking point than traditional PAM which makes it much less susceptible to burning.

We bake a lot of tarts and sometime the filling bakes out and can stick the pan causing for a mess. The high heat release spray coats the pan well and the tarts slide right off.

We generally do a lot of baking at our restaurant, so this high heat baking spray definitely does better than the regular release spray. I'm not sure how it all works, but pastries slide easily off our aluminum foil with this product. Definitely recommend!
