I don't know what Ghirardelli did to their coating, but it's just impossible to melt it. I've been working with chocolate for more than 30 years and it's a first time when I really don't know what is happening and what to do with these wafers. I wasted $ on 2 boxes. Very disappointed.

Best white chocolate by far. The taste is amazing. I use it for my waffle cones, I usually dip them in white chocolate and when it’s melted it becomes so creamy. ??

The Ghiradelli white chocolate melting wafers are the best I have found for my candy making. The wafers melt much better than other chips or bars that I have tried. They melt smoothly without clumping or seizing.

What on earth did Ghirardelli do to this recipe?? They have totally ruined this white chocolate recipe. It is impossible to melt. I have added extra paramount chips mixed and mixed. I have even decided not to dip chocolate covered strawberries this year for Valentine’s Day because of this, which is always very busy! Very disappointed! I thought it may be the box I ordered? They replaced it with the same mess!! Don’t waste your money!

This was such a great purchase for my small business. Not only was It super easy to work with but the consistency was perfect. If you are looking on making chocolate molds or making chocolate covered strawberries then I recommend this.

Good quality product and excellent pricing. I have a dessert shop and we dip almost everything in chocolate so the price of these wafers really keeps costs low and perceived value high. I had absolutely no problem with the wafers melting. I microwaved them in short bursts and always stirred to keep melting consistent. It worked well for coating pretzels and for making some fun small chocolate molds. I would recommend this product for anyone looking to up their dipping game while keeping an eye on the bottom line. The package arrived quickly. It’s a little odd that the bag inside the box is not sealed but, in all fairness, there wasn’t a single wafer that was outside the bag so the folding of the opening keeps them in place during transit. I didn’t feel like it was unsanitary but I would prefer a closed bag.

I don't know what happened to this chocolate. Usually it is the best overall taste, quality, and thickness. On my most recent order the chocolate is terrible and even after dipping treats the are still visible. I have contacted Webstaurant however they did not offer to exchange it. Very disappointing and will have to look for a different brand of chocolate.

Its actually my 2nd time buying this product. 1st, it was great. But the 2nd time, its getting so hard to melt it. I have to mix it with another brand so i wont waste it.

I have been using this brand of chocolate for almost 2 years and for me it was the best among all. But since May I started to receive the chocolate in bad condition, I mean physically it looked good but at the moment of melting it was the worst nightmare, no matter the method or not the time it just did not melt, and I can see from the other reviews that I am not the only one who has been experiencing this, I received 4 boxes of chocolate in this condition this year so I decided to stop buying it and try other brands, this month I wanted to give it another chance and ordered another box, due to my bad experience I melted some chocolate to try it and it looks good this time. Ghirardelli is my go to chocolate for all my baking. I use it to make cake pops, it melts easy and is very smooth. and it taste great!!

This chocolate is always a perfect consistency! Makes coating things a breeze. You can quick melt on the microwave or slow melt on a flat griddle, either works great! Also very easy to color the chocolate with powdered colors! A+!

I had been using a different brand of compound chocolate to make fillings (and occasionally for coatings/drizzling/dipping) for years. I decided to try the Ghirardelli when it was on sale back in November. I wish I had tried it sooner! It melts and flows perfectly. And I've had multiple customers comment on how many of my items seemed to taste better this season - myself included! They just had a creamier texture and better overall flavor. This will be my go-to from now on.

Definitely recommend using ghirardelli melts. I’ve used other brands, and nothing compares. Even merckens isn’t as good. This melts great and the taste is amazing.

The white wafers have a great taste. They aren’t too sweet but just the right sweetness for white chocolate. Out of the not tempered chocolates, this the best flavor.

Great product! Melts nicely and tastes great. It does not require use of paramount crystals if using straight white but does need some for deep colors as it can get a bit thicker. Would definitely buy again!
