Delicious dense firm texture, great for salads or lettuce wraps or with avocado and salmon. Olives are also good kind of fatty foods like avocado and nuts, with the healthy fat that you need. The only thing we have an issue wiht was the huge salt content that is always in canned olives, but we found if you soak them in water overnight most of the salt comes out which is much healthier and sweeter tasting too!
