The classic shape of this pan makes it ideal for baking rehrucken cakes, as well as other pastry items. Rehrucken translates to "saddle of venison" in German, which is exactly what this cake is supposed to look like! Traditionally, almond slivers are placed along the outside of the cake to imitate the bacon or salted pork used to lard saddles of venison. This one-of-a-kind pan is also great for baking almond cakes, and can even be used with a second pan to create a cylinder-shaped bread!

This pan is perfect for use in your cafe, bistro, or bakery. Use it to bake a chocolate-covered cake with traditional rehrucken slivered almonds, or bake an almond cake, sure to have guests coming back for more! How can I best maintain the non-stick qualities of this item?

To prevent food from sticking to your non-stick surface, we recommend lightly coating it with oil and wiping off any excess with a soft cloth or napkin. Applying sprays on non-stick coatings can cause food to stick more readily than using a fat or oil. Sprays can leave a glue-like coating, often missed during the cleaning process, which will begin to build up and cause foods to stick.
