Beautiful Bright Red chilies, and quite large peppers as well. These are by no means small. I roasted and dried them over a mild oven heat until the moisture came out and the outside was nice and very dark reddish brown, with a nice roasted smell. I ground them up to use as a seasoning in my kitchen. I put them in a blender and pulsed them until flaked, then shook the flakes through a medium coarse sifter and whatever did not pass through the sifter went back into the blender until all passed through. This makes a fantastic addition to my existing Cajun Seasoning, especially on meats.
