Preparing nopales to cook takes a bit of practice, but it's well worth the effort! Handle your cactus paddles with care to save yourself from pricks from the spines - it's recommended to handle them with gloves or a thick kitchen towel. Lay the paddles flat on a cutting board and run a sharp knife over them to remove any spines or brown bumps. After all the bumps and spines have been removed, you can dice, slice, or score your nopales depending on your desired application. Whole nopales can be grilled, though diced and sliced nopales should be boiled before use in recipes. To do so, bring a pot of water to a boil and add a pinch of salt. Submerge your nopales and boil for 10 minutes, or until they are tender. Once your nopales are cooked, rinse them under hot water to remove an excess mucilaginous slime, and then they're ready to use! In Mexican and Central American cuisine cactus paddles are traditionally used in nopales salad (sometimes called nopalitos) or prepared with eggs to make the breakfast dish nopales con huevo.
