Increase the shelf life of food by cooling or freezing it in a flash with the Irinox MultiFresh® MF 350.2 2T large pass-thru blast chiller / shock freezer! This blast chiller / shock freezer combination quickly and efficiently cools your food through the temperature danger zone to protect meats, fish, and produce from bacteria while also preserving consistency, moisture content, and nutritional properties. This unit can cool up to 772 lb. of food from 194 to 37 degrees Fahrenheit in 90 minutes or less and it can freeze up to 772 lb. of food from 194 to 0 degrees Fahrenheit in 4 hours or less. Irinox blast chillers use a unique indirect air distribution system with specialized airflow patterns to ensure the cabinet has ideal temperature uniformity throughout while also preventing dehydration of product.
This blast chiller / shock freezer can accommodate (2) combi oven trolleys sized for 18" x 26" pans and (6) slim racks sized for 12" x 20" pans (sold separately) for efficient operation. With the added pass thru feature of this model, users are able to enter or exit from either side of the unit for the ultimate kitchen flexibility and workflow. It boasts an intuitive touchscreen display to select between 43 product specific cycles including up to 20 customized cycles, while the MultiSensor 5-point probe relays accurate internal temperature readings to ensure food stays at the correct temperatures at all times. With the included HAACP control software, including WIFI data transfer and a USB data port, users can easily track, download, and transfer data on how long it takes certain foods to cool or freeze.
This unit is constructed of durable 304 stainless steel for long-lasting use. The Sanigen technology enhances sanitation with a 24/7 system that cleans every part of the chamber, including hard-to-reach areas. A powerful 25 hp compressor circulates eco-friendly R-404A refrigerant in its remote, air-cooled condensing unit for optimal cooling power. A hardwired 208V, 3 phase electrical connection is required for operation.
