Directions

  1. Fill a 20 qt. stock pot 2/3 full with water.

  2. Over high heat, heat the water to a boil.

  3. Add the macaroni to the water and stir with a long serving spoon until the water begins to boil again.

  4. Reduce heat to medium and continue to boil the pasta for 8-10 minutes, stirring occasionally.

  5. Drain noodles, setting aside 2 cups of the pasta water (per batch) to use with the cheese. Return noodles to stock pot.

  6. Stir aged cheddar cheese, queso cheese, and pasta water into the pot until melted.

  7. Serve immediately.
