We BBQ our own brisket for a monthly outdoor market, and these knives are what we use. They keep their edge for a very long, and even then, need only minimal honing. WEBstaurantstore has the best price we've found, and shipping is quick and low cost.

The carving knife I used for Christmas dinner this year. The long, sharp blade made cutting out ham extremly easy. The V-lo handles are the best I've used in the business.
