Its high quality blade is made of carbon steel, which delivers higher performance than stainless steel and is preferred by experienced chefs. However, carbon steel is not rust-resistant and requires special care and cannot have food left on the blade for long periods of time, especially acidic foods. Precision ground, this carbon steel blade provides just the right amount of flexibility for even easier handling of food.
This turner ensures high-quality performance. however, if not taken care of properly, this turner's long-term functionality may diminish. Your turner should be hand washed only in mild-to-medium strength detergent, and towel dried immediately afterward to prevent rusting. This is a quality product. I like that the perforations allow grease to drip through. I wish they made this product with a shorter blade, though, as it\\\\'s too large to use in most home application (except perhaps on a grill or griddle).

My kitchen manager loves this turner. Perfect size for our grilled sandwiches, and the perforations leave behind any grease or liquid that will make bread soggy. Just don't put in the dishwasher!!
