Customer questions about this product
- What are the benefits of using a carbon steel turner?
- Carbon steel turners are better performers than stainless steel but are more likely to rust if not cared for properly. To prevent your carbon steel turner from rusting, we recommend oiling and seasoning it like a cast iron skillet to remain rust free.
Looking for the ultimate turner for your grill or restaurant? This Dexter-Russell Traditional wood-handled turner offers performance and value for commercial use and combines durability and efficiency into one great product! Featuring a natural beechwood handle, this turner is perfect for the traditional chefs who prefer the warmth and feel of a wooden handle. The handle is secured to the blade with brass compression rivets for ultimate sturdiness. Exceptional at holding an edge, this turner's long blade is perfect for turning cakes, flipping burgers, pancakes, and other grill menu items. Its high quality blade is made of carbon steel, which delivers higher performance than stainless steel and is preferred by experienced chefs. However, carbon steel is not rust-resistant and requires special care and cannot have food left on the blade for long periods of time, especially acidic foods. Precision ground, this carbon steel blade provides just the right amount of flexibility for even easier handling of food.
This turner ensures high-quality performance. however, if not taken care of properly, this turner's long-term functionality may diminish. Your turner should be hand washed only in mild-to-medium strength detergent, and towel dried immediately afterward to prevent rusting. High heat and chemicals from the dishwasher can wear down your product over time, and the wooden handle will eventually fade and split if put in the dishwasher. You should not soak your product for long periods of time or allow it to remain submerged for cleaning. Also, do not use any chlorine or bleach products. Finally, refrain from letting your product soak in aluminum pans or stainless steel sinks to prevent Galvanic action from occurring.

I usually buy Dexter-Russell Turners, but in the Stainless Steel / Walnut Handle version. I gave this version with the mild steel a shot, but found that in the *pretty extreme* environment of my restaurant the upkeep for the mild steel was its downfall. These are nice for working a flat-top, and hold up decently, but in time the leading edges start to deform, and if you don't discard them in time, could chip off. The biggest issue came when exposed to moisture, the handles swelled up a little and unless coated in oil, they will surface-rust. For a cheesesteak shop, I'll have to stick to the Stainless/Walnut version.

This is my go-to turner. The steel has a perfect spring which is firm but yields when you want it to. The edge is not knife sharp, yet it slices through meats when pressed and keeps its edge. In a word, the turner is versatile in the best ways. The photo shows the wavy lined in the carbon steel which provide its resilience. The handle is not dishwasher safe and should be treated like a cutting board. I use mineral oil periodically. Despite some fingerprints here and there, the thing stays in like new condition despite heavy use.
