Because it can fit a variety of inserts and pans, the counter is perfect for operations with rotating menus or set meal times, as it can be converted to a different configuration in just seconds. Plus, an 8" front shelf that has a 32 1/2" ledge height is built-in for a resting place for trays, plates, or supplies while refilling condiments.
