Step 1: Preparing the stone. Place a damp towel on the cutting board and place the stone on the towel. Lubricate the stone with oil or water.
Step 2: Finding the angle. Hold the knife at a 90 degree angle. Halve the angle to 45 degrees. Halve the angle again to 22.5 degrees.
Step 3: Sharpening. Pull the knife heel to toe. Flip and repeat the same action. Push knife toe to heel. Flip and repeat the same action.
Step 4: Using a sharpening steel. Place a damp towel on the cutting board. Place the sharpening steel on the towel. Hold the knife at a 90 degree angle. Halve the angle to 45 degrees. Halve the angle again to 22.5 degrees. Pull the knife heel to toe, alternating sides. Wipe down the blade with a damp towel. The knife is sharpened and ready to cut.
