What's the difference between open well and sealed well steam tables?
Open well tables can be used with spillage pans for moist heat holding, or without pans for dry heat holding of fried foods or other crispy items. This design allows the flexibility to have some of the wells using moist heat, and some of them using dry heat, at the same time. Open well tables do not have drains, so the spillage pans must be removed and emptied after service.
Sealed well tables do not need spillage pans; water is added directly to the well, and is emptied through a drain after service. However, sealed well tables should not be used for dry heat holding.

Made of a heavy-duty, 16 gauge stainless steel frame with a stainless steel top, this unit ensures the long-lasting durability you need for your correctional facility's foodservice operation. The unit features drains with copper manifolds and one master valve, which eliminates the need for cumbersome spillage pans and reduces clean up time. For convenient, easy maintenance, the electrical components are easy to access, but concealed to deter tampering or accidental changes.
Designed specifically for your high security environment, this steam table features a tamper-proof power switch that can turn the unit on or off after the cooking controls have been set and locked into position. For additional safety, the unit has tamper-resistant hardware and a lockable stainless steel control cover. Plus, its 5" swivel casters provide easy maneuverability through your establishment, and 2 casters have a brake to keep the unit securely in place. A 208V electrical connection is required for operation.
