Fold out the supporting leg, locking it in place under the edge of the large plate as shown. Your mandoline is now ready to use. Cutting vegetables into flat slices is achieved using the central cutting plate. You should first prevent the crinkle plate from cutting by lowering the lever. You need to do the same with a set of knives. To disengage this cutting set, firstly raise the large plate using the lever. Then, disengage the set of blades by pulling on the handle. You can adjust the cutting thickness to suit your needs by lowering the large plate to various levels using the lever. Now, all you need to do is slide the vegetable from top to bottom down the mandoline to obtain perfect slices.

Cutting vegetables into sticks is carried out by using the built-in set of blades that looks like a comb. To put them in the cutting position, raise the large plate as high as possible using the lever. Pull the handle and lock it in place using the pins to bring the set of blades into play. Then by lowering the large plate to suit your needs, you can obtain the cutting thickness you want. To do this, raise the large plate in order to lower the set of blades. Then, re-position the large plate, ensuring that it is lined up with the central blade to prevent the vegetable from catching. Use the lever on the crinkle plate to adjust the cutting thickness. To obtain enhanced crinkle effects, cut once holding the vegetable in one direction and make a second cut turning the vegetable one quarter of a half of a turn and so on.

You can achieve a fluted effect or cut vegetables into wavy sticks or serrated round slices in two operations. The first is carried out using the crinkle plate in order to produce the fluted effect or cut thick slices. And the second, using the central cutting plate to obtain serrated round slices or wavy sticks for example. Depending on the cutting plate being used, don't forget to ensure that the other plates are not operational.

The guard makes it possible to cut precisely in complete safety, except for cutting on the crinkle plate.     I've owned a plastic model before and no comparison. This model is all steel and the blades are part of the mandoline so there is no need to switch them out. so pleased with my purchase.

    I've used many mandolines throughout my career, and this is probably my least favorite. As other reviews have stated, the blades on this BRAND NEW mandoline are not sharp. You have to apply force to get your product to slice. Will work "OK" with our cut resistant gloves, but I've used cheaper mandolines that work better than this one. The guard is a joke, don't bother. The shaped slicing blades are even worse than the straight edge. I would spend your money elsewhere. Would love to return this product if i could.

    I looked long and hard before purchasing the Bron Mandolin. This thing is SHARP. It will slice and dice anything, including you. Do yourself a favor and get some Kevlar or cut resistant gloves. This thing is worth the price, it is Awesome.

    This is such a great product. I've been using Japanese Mandolins for a while, but this is far superior. Some people argue they serve different needs and in some cases it is truth, but working with this quality material, just gives you a different grip. Heavy duty stainless steel, nice guard and varied set of blades. Very happy so far.

    Purchased recently based on reviews. Have used other mandolins with no problem and was looking forward to a super sharp instrument. However the slicing blade is not as sharp as advertised and even using the built in guard it is difficult to use and dangerous. If the blade where sharper the veggie should cut smoother and you would have no issues, however blade feels dull and the cut is not easy, resulting in you having to push harder, and therefore perhaps cut your hands. Return policy is horrible and restocking fee makes it not worth the effort. Very dissapointed in this purchase.

    I read several reviews and did a lot of research before I finally settled on this mandolin. So far I'm very happy with the decision and have used it quite a bit. It is well built and sturdy; the blades are easy to set and reset. I like the hand guard that came with it as you never have to get near the blades when cutting up vegetables. The brace for holding it on the countertop is a nice feature, but the rubber feet make it sure footed even without the brace. This is a good all around mandolin that is heavy duty and very well built with virtually no plastic to break; the only plastic is the knob on the hand guard but that is very large and solid so I don't see any issues with that. This is a good investment if you are looking for a well built mandolin.

    This is the real deal. When you think of a mandolin this is what you think of a solid all stainless steel construction built to last. It is also extremely precise and won't slip like other cheaper models. Save money & headache in the long run and spend a little more up front.
