Ingredients

  • 4 ears of corn, shucked
  • 1 cup sour cream
  • 2 chipotle peppers in adobo + 1 Tablespoon sauce from can
  • 1 garlic clove
  • 1/2 lime, juiced
  • 1/4 cup of olive oil
  • 2 Tablespoons chili powder
  • 1 Tablespoon of paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions

  1. Prepare chipotle crema. Add sour cream, chipotle peppers and sauce, garlic clove, and lime juice to blender or food processor and blend until smooth. Refrigerate sauce until ready to serve.
  2. Preheat grill to medium-high heat.
  3. Trim ends off corn cobs. Place each corn cob upright on cutting board and carefully slice in half lengthwise down center of cob, rocking knife gently back and forth as you cut.
  4. Place halves down on cutting board and cut again into quarters. Cut quarters in half crosswise to create small corn ribs (this will give you a total of 32 small corn ribs when all cobs are cut).
  5. In small bowl, combine oil, paprika, chili powder, garlic powder, and onion powder. Generously brush corn ribs with seasoning mixture.
  6. Place corn ribs on grill and cook for 6 minutes, then flip and cook for an additional 6 minutes until tender and slightly charred.
  7. Season corn ribs with salt and pepper to taste. Sprinkle with fresh cilantro and serve with chipotle crema dipping sauce.
