Pumpkin Puree Recipe

Yield: 4-5 cups puree

Total Time: 50-65 minutes

Ingredients

  • One small baking pumpkin (4-6 pounds)
  • Salt

Directions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Line baking sheet with parchment paper.
  3. Core out stem of pumpkin and discard.
  4. Slice whole pumpkin in half.
  5. Scoop out the “guts” (the stringy bits and pumpkin seeds – not the flesh).
  6. Sprinkle kosher salt on pumpkin flesh.
  7. Place cut-side-down and skin-side-up on baking tray.
  8. Roast for 40-60 minutes, or until a pairing knife easily pierces through pumpkin’s skin and flesh.
  9. Scoop out the flesh into a food processor. We recommend using a cookie scoop for this step.
  10. Blend on high for about 5 minutes, or until the puree is smooth.
