How do you guys harvest the strawberries? Basically just pick them off the vine, it's nothing special we don't have a machine or anything like some do. So by hand? Yes. Awesome. You think? They're juicy and sweet. Very delicious so i'm going to grab a couple pints for the restaurant. We got some beautiful strawberries here, we're going to head back to Cleo and make our strawberry confetti. So we're back from the market, I'm going to start off our dessert with the Waring tabletop mixer. So first step that we're going to do here is, we're going to add our butter. Confectionery sugar, and we're going to drop on. I didn't have to use a rubber spatula to scrape down my product, the Waring mixer does it all itself. It's actually a perfect, even circle in relation to cream and sugar. So now we're going to add our cream cheese, I love that it has this little plastic guard, again it's another product that doesn't get on the chef. The shape of the bowl helps you feed it properly. And as you can see with each piece of cream cheese, it binds up right away with the butter and sugar. Here we have a fresh vanilla bean. Slice it down the side. Then we raise our speed. This clips right off, pops right out, i'll show you that even after all that aggressive whipping, you can see that pure silver, shiny, clean. None of the product got splattered, and we have a full, perfect, aerated cream. So now we set this aside and i'm going to use the food processor to show you how we do our strawberries. So our next step is using the Waring LiquiLock 3.5 food processor. What's great about this is that it has an adjustable blade. So as you can see, you have different millimeters here you have 1 through 6, and for our strawberries we're going to use 6 'cause I like the thickness that it gives the strawberries. Now, I would never, ever in a million years not use a knife and use a piece of equipment to slice fruit or to slice a product, but as you are going to see here, this just locks right in here on the stem, the speed of the blade, you can actually take these delicate farmer strawberries, and as we place them, they literally get sliced instantly with barely any bruising. And now we're going to take the cream we made earlier, a little hotel pan lined in plastic wrap, our sliced strawberries, and we're simply going to put these strawberries right over top of our cream. And then we fold our cream. From here we're going to place our base simply in our pan, and place in the freezer for later use. Again, back to our Waring mixer, this is a simple recipe for my strawberry cracker. It's basically some tapioca starch, some sugar, and again, to feature the plastic top here, we can turn our mixer on, and the tapioca starch doesn't get everywhere all over yourself, the table. Take our strawberry puree, add it slowly, and as you can see, the starch is starting bind with our fruit. So we inject our tapioca-strawberry base into our plastic tube, controlling the amount of air pressure in here, there's about good. So we tie our ends here, and then from this stage, we take our strawberry tube and we poach it in a water bath for about a half hour at about 225 degrees, and then from there, we actually take the product and stick it in an ice bath, 'cause the tapioca starts to congeal, and freeze, and slice into strawberry chips. Next we're going to use our Waring spice grinder and the best thing about this spice grinder is you can actually take freeze-dried strawberries and make a powder and the blade is so fast and so sharp that there's no gumming that appears in the natural packing from the strawberries. We're also going to be adding some sugar, some citric acid and tartaric acid. So with these ingredients we're going to be creating our strawberry chips. So first we put our attachment here, it just locks in. Using the Waring product you actually save time in the kitchen because you don't have to get a strainer or chinois of some sort to actually pass your powders to get the lumps out, because the spice grinder does it all itself. So from here, we take our great powder, and we simply add the sugar, citric acid, and tartaric acid, and we combine them together. This is going to be our coating for our chips that we're going to fry later in our Waring fryer. So for our basil cream, we have a little bit of blanched basil, we bring water up to a boil, we blanch our basil, we shock it in some ice water, we squeeze out a little bit of the water, leaving some moisture to make a puree with our Waring food processor. Little bit of glucose, some mulled on sea salt, and heavy cream. Another great feature about this is that we have a pulse option. And this pulse option actually helps you control the speed of the blade and you can actually take something thick as glucose, which is always fun to get out of a bowl, little mulled on sea salt, tiny bit of cream, and we have this great pulse option here. Rest of our cream. So I would never, ever, put fresh herbs in a food processor, but in this case I use the Waring food processor because it is sealed all the way around, so with the cream I don't have to worry about leakage and the blade is so sharp and fast, there's not a lot of bruising on the herb or oxidation marks. So at this stage we take the food processor out. Another great feature of this food processor is that the blade is actually locked in, so you can scrape all your oils and cream and pulsed Thai basil, huge strong flavor right now from these herbs. So from earlier this is our strawberry confetti that we molded in a hotel pan here. And, I've actually took the time to eject it into a tube also to have two options just like before, this just locks right in. Turn it on. And you can actually take either your blocks or your tube, whatever you would like, personally, I like doing it in big blocks, and you just simply add this to the top. And now, we have this light, airy, strawberry confetti. So for our plate up here we have our crispy strawberry chips that we used our Waring spice grinder for, our local strawberries, some fresh hibiscus, floral herbs, freeze-dried strawberries, some extra-virgin olive oil, gastrique, hibiscus puree, and lastly our strawberry confetti. We're finishing the dessert off with malted colon nut sorbet.

    This is a pretty good commercial mixer. Powerful, quiet and smooth. The bowl is very tall and the way the mixer is constructed it can be a little difficult to see what's going on while the mixer is in use. I don't necessarily prefer this mixer to my 8 qt Kitchenaid commercial mixer, but it definitely has its place in my bakery.

    I have purchased it for in home based bakery. I use it once every week. I like the design. It is also safe to use when children around because the whisk is deep in the bowl and the plastic cover locks sturdy in place. It is convenient to use if you don`t have to add many different stuff into the batter while you are mixing, that`s because the bowl is tall and narrow.

    i agree with angelo s , this machine is not for commercial use not sturdy at all , it has half the speed of a kitchen aid the manufacturer states it is a 7 qt mixer , yes the bowl is , but the design of the machine is poorly designed. the attachment is to small for the bowl to mix no more then 5 qts its a rip off if there marketing this machine as a 7 qt

    Thanks for your review! It sounds like the issue is a bowl that is not large enough. We recommend using a bowl that is larger than the batch you would like to mix in order to prevent ingredients from spilling. If you would like to mix 7 Qt. batches, you may be interested in a 10 Qt. mixer like the Avantco MX10 Gear Driven 10 Qt. Commercial Planetary Stand Mixer with Guard.

    I've purchased 2 of these mixers. They are fantastic, the attachments stay in place while mixing but come out so nice and easy when finished. Creams cookie mix fast and effective, dough came out mouth watering. You won't go wrong purchasing this machine. Stainless looks amazing on the counter.

    This is a perfect mixer for my small restaurant, it doesn't take alot of space, is easy to move around. It can handle heavy cookie dough just fine. Would give it 5 stars but the plastic guard on the top is difficult to put on, but that is minor. great affordable mixer.

    Bought it because it is NSF but my home Kitchen Aid is sturdier and has a stronger motor. We have had to replace the splash guard and wire whisk. Does the job for whipped cream and meringue, but a Kitchen Aid would have been cheaper.

    Better than the kitchen aid in every aspect but very big in size. This mixer is a great item and very impressive to use and see in person. Keep in mind the bowl size is 7 quarts which is great for dough mixing and large quantities. This is a great splash guard that clamps down and has an opening the and acessories are of the highest quality. Would recommend to anyone.
