Ideal for making small batches of caramel, toffee, brittle, gummies, hard candy, and fudge, this unit generates 10,000 BTU per hour and has a batch capacity of up to 20 lb. It can cook full batches of most candies in as little as 20 to 60 minutes. It boasts a powerful 3 kW heating element that can heat product up to 435 degrees Fahrenheit. The unit's agitator utilizes spring-loaded scrapers for efficient heating, while the water-flush feature enables rapid cooldown after your set temperature is reached, helping to prevent burning.

This unit boasts a stainless steel construction with an easy-pull handle to make pouring a breeze. Simply tilt the kettle or use the included valve to pour the candy mixture onto your desired surface. The kettle can also be locked in a semi-tilted position for enhanced mixing action. Featuring a Smart PLC touchscreen control panel, this cooker is easy for any employee to operate. You can monitor batch and kettle temperatures with this convenient unit, giving you complete control over every aspect of the cooking process. Programmable features include variable high / low speed and Fahrenheit / Celsius displays.

For safe operation, the lid-off interlock switch immediately stops the agitator when the lid is removed. A sturdy base with 4 legs provides ample stability during even the most intense mixing jobs, while the included stand keeps your unit securely mounted to the table. The stand also raises it to a convenient working height, allowing you to pour directly into a Truffly Made depositor (sold separately). This unit requires a 208-240V, 1 phase electrical connection for operation. A cold water source and drain are required for the water-flush feature.
