Each shelf has two zones and temperature can be independently managed for each zone. A tray seal on each zone provides radiant heat to soft, juicy foods while sealing them to prevent the loss of moisture. For crispy or fried foods, the tray seal can be removed, allowing air to circulate around the food to prevent moisture build up.
