The Perfect Tuna

Tuna is both a simple protein to prepare and a rewarding fish to serve, when handled properly high quality tuna healthy flavorful and beautiful. Begin with a trimmed thick center cut piece of tuna loin. Put your pan over high heat and turn your exhaust fan on. Add a high smoke point oil and give it twenty seconds to heat up. Before your oil begins to smoke carefully place the tuna into the hot pan some chefs choose not to season the fish before searing as the salt pulls out moisture and inhibits brown color from developing. Leave it to sear until it develops a beautiful brown crust usually about 30 seconds but it could be more or less time. It all depends on your burner. Once all sides are brown remove it from the heat and allow it to rest for a few minutes before slicing.

    Used the Mercer M24012 12" Pointed Sashimi Knife to cut a cantaloupe. This blade is so long. It cut the cantaloupe so easily. So long and sharp. Glad with the purchase. Arrived super fast.

    Nice price compare to quality. Don't compare to a traditional Japanese high quality that make with hard steel. it's medium weight nice plastic handle but wood feeling grip. Nice shape of blade. It comes with very sharp edge. Nice for everyday use.

    You will be surprised by how light and delicate this knife feels in your hands. It's quite long, including the handle. It barely fits in my knife case. I like it for slicing fish filets, tomatoes, peppers, and for removing the skins from slab bacon. A fun knife to have in your collection. The rubber handle is ideal for slicing slippery fishes and fatty cuts of meat.

    Sharp, professional knife. Ideal for sushi and Japanese cuisine. Rubber handle makes it safely fixed in your hand. One sided sharpening. Nice product for reasonable price. Buy it with no doubt!

    when i first got this knife i was very happy with it... it comes about 80% sharp... i love the handle and the fact that its rubber... the only draw back is that its very hard to sharpen its built like a traditional Japanese knife with most of the sharpening done on one side

    The knife looks very aesthetic. It is the best-looking knife on my knife rack. I would have preferred wood handle instead of the plastic handle. I rarely use this knife but I am happy with the performance when I have used it.

    Beautiful looking knife Mercer did a good job on this one. Bought this one on a whim but glad I did. This came extremely sharp and the blade has a small traditional secondary bevel at the edge on one side. This should make it easy to re sharpen later on. The grind and finish are flawless you will not be disappointed.

    This is a good sushi style knife by Mercer. It works nicely for slicing seared tuna. I can get thinner slices from this knife than a standard chef's knife.

    This 12 inch sashimi knife is great for commercial use. It can deffinetly compare to the more expensive knives. Mercer makes some great products. Deffinetly a good buy.
