    Although this knife is listed as an usuba, it's actually a nakiri. The two terms often get confused. they're both used exclusively for vegetable prep, and the basic size and shape are similar, but nakiri-bocho has a double-beveled (ryoba) edge, and is used on a board, whereas an usuba bocho has a single beveled (kataba) edge, and is used more for in-hand techniques, such as katsuramuki (roll-cutting). Call it whatever you like, as long as you understand that this knife has a double bevel (50/50) edge and is more suited to board work. The knife is fully hot-drop forged from good German steel. The blade is very sharp out of the box and thin behind the edge, which enhances the feeling of sharpness. It glides through vegetables easily, without any steering or wedging issues. The handle is comfortable and has an excellent non-slip grip. The 7" length makes this knife a great choice for vegetable prep on a smaller cutting board or where space is limited, and the width of the blade allows for good knuckle clearance, and is handy for transferring food. The blade has very little belly, which makes it well suited to push cutting, pull cutting, or tap-chopping, but it's not a good choice for rock-chopping. This is a very useful knife to have on hand, and makes short work of any type of vegetable prep. It's a very fast and nimble knife, and it's a joy to use. It out-performs many knives costing a lot more. If you're looking for a good, inexpensive, capable veg prep knife, this one comes highly recommended.

    We read a lot of reviews before purchasing this from WebstaurantStore.com. We were so excited. My husband has cut himself twice since purchasing, it is REALLY sharp as they say. Small price to pay for the great quality of this knife! Where else on earth would someone cut himself and say "Man, that's a good knife!" The blade is strong and sturdy. The handle is good quality. I was worried that the "Genesis" handles would be cheesy and cheap based on the colored ones and how they looked in the photos, but this handle is really nice. We are being converted to Mercer. Used to have all Cutco and Dexter but Mercer is a dang fine quality knife! This is one of 3 products we now have from Mercer.

    LOVE this knife. I have used it for several different applications and it preformed beyond my expectations. Feels good, very sharp and works well. Well worth the money.


    This Usuba knife is a great bargain. It is perfect for precise cuts and super thin slices of tomatoes. Everyone needs an Usuba in their kitchen!!
