I used to fish in Texas and would clean my fish at a fish cleaning station located inside the park. I often observed the professional fishing guides using these "white handled knives" while filleting their catch. I inquired and they were using the Dexter-Russell brand, which they swore by. I decided to order one and am glad I did. This fillet knife is high quality at a great price. I used it to debone chicken. Would buy it again.

Very sharp and reliable. I use this to prepare chicken breast and it cuts through with ease. Holds an edge very well and sharpening is very easy.

Great for salmon! I buy salmon in bulk and I usually fillet the salmon in portion sized pieces, this knife cuts through that thick fish like buttah! Its nice and lightweight as well but I would've like a better quality handle.

This knife is a Dexter which pretty much says it all. Knife arrived very sharp and has held an edge through many many fish. I use it three or four times a week.

This knife is quite sharp, as it is supposed to be. It cuts through regular raw meats like going through butter! Fileing a fish was smooth, it cut through the bones very easily. I did buy a sharpener for it, since it will need sharpening at some point, but not any time soon.

I ordered this knife because my business is on the Oregon Coast. (Salmon Country). I ordered three to see if there might be an interest. All were sold before being displayed. The fisherman in my area found out they were coming and purchased them sight unseen. When they received them they were 110% pleased. .

In same class as dexter russell products, cant touch price elsewhere. We belong to 'industry clubs' and they cant compare with WEBST* prices, even after shipping costs
