Many gas equipment manufacturers need to make adjustments to the equipment so it operates correctly at elevations over 2,000 feet. Sometimes we can special order from the manufacturer and have your cooking equipment delivered ready-to-go, but in cases where your unit is in stock and waiting to ship, you’ll need to have a qualified service technician come to your location and alter your unit at the time of installation so that it is compatible with a higher elevation. This kit includes a hybrid wood / liquid propane gas-fired oven, an accessory package, and an install kit. The oven comes pre-assembled with the dome and hearth attached for ultimate ease. The install kit includes mortar, an insulating blanket, insulating boards, an anchor plate, and a steel plate to help you complete your setup. A pizza peel, cleaning brush, and infrared thermometer are included with the accessory package so you can get started cooking right away. Perfect for building into your patio or outdoor deck, this kit ensures compatibility in a versatile range of cooking spaces. Plus, the 38" x 28" cooking surface allows you to cook a variety of dishes in a single oven.
Since this model can cook with either wood or liquid propane, you can choose your fuel type based on your business needs and your setting! The oven's signature FlameRoll effect delivers a consistent flame that can heat the cooking surface up to 1,000 degrees Fahrenheit. It has a two-burner system for versatile cooking, including a 36,000 BTU infrared burner that's perfect for searing meats and an 18,000 BTU ambient burner to help you achieve more indirect heat. With simple on/off switches for both burners and a temperature control knob for the infrared burner, the control panel makes start-up quick and simple.
For wood-fired operation, wood can be loaded into the front of the oven, allowing you to infuse pizzas, meats, and vegetables with the flavors of smoky wood.
