- How can I properly care for this aluminum item?
- Hand washing is always the best option to ensure that your aluminum stays in best working order. However, if you decide to clean these in a dishwasher, we strongly recommend using metal-safe detergents and sanitizers to eliminate any flaking or tarnishing that could occur from some harsher cleaners.
- What's the difference between a riveted and a welded handle?
- A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.
For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
This 30 qt. heavy weight aluminum-clad brazier is constructed of 18/8 stainless steel with a heavy-duty 3-ply bottom consisting of two layers of stainless steel surrounding an aluminum core. This results in extra strength and allows for superior heat distribution. It's great for browning meat and vegetables, as well as simmering over low heat with small amounts of liquid.
This 30 qt. brazier comes complete with a matching cover and sturdy, riveted side-loop handles for a secure grip. Since these handles are riveted on, they ensure a very rigid connection between handle and vessel, guaranteeing longevity even in a commercial kitchen.

We have been using this guy for 2 or 3 weeks now, after two years of using a similar lighter-weight aluminum one from the site. It's definitely more expensive, but more pleasant to cook on, easy to deglaze with, and will withstand years of daily use. awesome pan!

Fantastic brazier for making roux for gumbo and roasting meats in the oven. This is a serious cooking tool and has held up extremely well for almost a year in our very busy kitchen. Highly recommend!

This large brasier is amazing. We use it to caramelize onions. It fits on a standard induction burner and the base is substantial enough to conduct the heat evenly. Great purchase.

Very big, and useful, it is nice for browning meats, and making sauces and stocks. Make sure that you have room for it on your stove top though!
