How to Use a Cake Leveler

Hi! I'm Emily Tatak from the Wilton Test Kitchen. Today, I'm here to show you how easy it is to level and torte your cakes. When a cake bakes, it sometimes develops a dome top, also known as a crown. By removing the crown, and leveling your cake, you're creating a flat surface, perfect for decorating. Leveling is crucial because it prevents cracking when stacking and filling your layers. There are two ways to level and torte your cakes. You can use a serrated knife or a cake leveler. To begin, securely attach your cake to a cake board with a small amount of icing - just like this. This is crucial because this prevents your cake from moving around while you're leveling. If you're using a cake leveler, you first want to place your cake on a flat surface. Place the leveler next to your cake, so you can see how high to set your wire. You want to remove as little cake as possible, while creating a flat surface. There are notches all they down the side of the leveler, numbered 1-9 for easy adjustments. In this instance, I'm using a number 2. So, using a gentle sawing motion, I'm going to cut through just the top of my cake, and remove the crown. I like using a cake leveler because it creates an even and straight cut, every time. This leveler can be used on any cake, round or square, up to 10 inches, or even a 9 by 13 cake. If you're using a serrated knife, place your cake on a turntable. While slowly rotating your turntable, use a gentle sawing motion to remove the crown. From here, you can leave your cake "as is" or you can cut it into multiple layers, called torting. Torting adds height and gives you the opportunity to add additional filling to your cake. If you're using a leveler, place your cake on a flat surface. Re-position the wire, so it lines up right in the middle of your cake. In this instance, it's about a number 7. Using a gentle sawing motion, I'm going to cut right through the center of my cake, giving me two equal-height layers. Carefully remove the top layer of my cake with a cake board to prevent cracking and breaking. If you are using a serrated knife, place your cake on a turntable. Position your knife in the middle of the cake, keeping it level. Place one hand on top of the cake and, using a gentle sawing motion, cut horizontally through the cake, while rotating the turntable.     This Wilton cake leveler is ok. In my experience, I've found that if my cake is very moist and soft, it tends to tear it quite a bit. I often go for my long serrated knife instead, but will try this again. Perhaps, as one other reviewer suggested, I'll put it in the freezer for a few minutes first.

    I just received this cake leveler, but one side of the wire is not attach to the metal piece... I can't even try it to see if it work... Don't know what to do with it now......

    This didn't really work for me. It should have a serrated edge wire or something because i have to use a knife to cut through the crust and then use this to get clean layers. Otherwise it would do anything, except possible tear.

    I've had this a long time and actually use it frequently. It does the job, but you do get some tearing of the cake. There's actually a newer model on the market that has a wire with tiny serrated teeth. I think this solves the problem of cake tearing. I don't know which model webstaurant store has, but I assume it's the one in the picture--the older model. I've had mine for years and the wire is still in good shape, unlike some of the other reviewers.

    Must have for creating a professional looking cake. The 10" diameter is great because the standard size for our cakes is a 9" round cake pan. Sure you can do it with a traditional knife but the results are never as good as using this tool.

    After using a long knife to level and create layer cakes for years, I cannot believe how much simpler and easier the wire cake leveler is. Anyone who bakes and frosts cakes should have one.

    This cake leveler is a life saver! Having this leveler makes it so much easier to level and fill my cakes. Every beginner needs to get this! I still use this every time I bake a cake. It has notches on the sides so you can choose where the wire goes for the thickness of the cake. A must have!

    what a great price for this little cake leveler! maybe not the sturdiest one out there but for occasional home use it works just fine.

    Once it gets going through the cake, this works well. There might be some trick to it that I haven't figured out yet, but the only way I can get it started is to make a small cut in the cake with a knife and then use the cake leveler (which is a piece of wire) to "walk" through the rest of the cake. I've also found it's easier if the cake has been chilled in the freezer for about 20 minutes, but that generally makes frosting it easier anyway.

    This Wilton Brand Wire Cake Leveler is OKAY. Personally, I wouldn't recommend this item for commercial use. If just using at home, you should be fine.

    I used this product to level cakes before I learned how to properly level a cake with a serrated knife. They work well but they do rust, which isn't that big of a problem but it is sometimes. Also, the little white feet that come on it come off easily and I lost both of mine. If you have the time, learn to use a knife...

    this is a nice product and it is easy enough to adjust and clean but i'm not a fan of the rubber feet on each side, it makes it harder to just glide down the cake and get an even level

    Terrible cake leveler. You really are just trying to cut/level your cake with a wire. It ends up just tearing your cake no matter how much jiggling you do. Spend the extra money on a better one.

    This tool is great much easier to tort cakes. This makes great even layers. The cake comes out a lot better with lot of layers of cakes

    This cake leveler didn't work very good on a frozen cake. I am not sure I will be able to use it. I thought it was a bigger one that would cut a sheet cake. I think it is just too small.

    A must have tool if you plan to decorate a lot of cakes. Nothing is worse than trying to level a cake with a bread knife and suddenly your cake is an inch tall because you cut crooked so many times! And a nice level cake always looks nicest! This will cut a nice perfect cake every time, and its easy to use! Be sure to cut a fully thawed, not frozen cake.

    I got this for leveling cakes. I don't use it much, but it does the job. I like that it's adjustable, so you can make two thin layers out of one layer of cake, or just cut off the hump, if you want thicker layers. Takes a bit of finess, but I got the hang of it pretty quickly.

    This inexpensive tool is really handy in the kitchen, it helps even out cakes and get that top layer off to help you have leveled cakes!We have a couple now, and are in the need of more we use them so much!

    LOVE, LOVE, LOVE our new cake levelers. The children learned the importance of leveling their cakes and even the 4 year olds were able to handle them without a problem. Leveling cakes is difficult for adult hands, but with these levelers the children breezed through the lesson and have confidence in their ability to level a cake at any time.     These are the best for making two layers of cake into 4. I keep extra on hand, since they are so cheap, so I'm never without them. Easy to use, nice clean cut even on delicate cakes.

    This is a no frills cake slicer at a great price! There are no flat feet so you need a steady hand to make sure that you cut even layers. It has tiny grooves to match up on either leg with how tall to set the wire. I gave it 3 stars because Wilton does have another slicer with flat feet which makes it very easy to make nice even layers.

    This cake slicer works great. It works best on a partially frozen cake to prevent snags in the cake. With they sold replacement rubber feet I lose them all the time.
