Splenda 1 lb. Monk Fruit Sweetener

Suggested Recipe: Keto Orange Cream Cookies Sandwiches

This recipe makes 15 cookies.

For the filling:
4 oz. fat-free cream cheese, softened
2 Tbsp. unsalted butter, softened
1/4 cup Splenda monk fruit sweetener
1 orange, zested

For the cookies:
1 1/2 cup superfine almond flour
1/2 tsp. baking powder
1/8 tsp. kosher salt
1/2 cup unsalted butter, melted
3/4 cup Splenda monk fruit sweetener
1/2 tsp. orange extract
1 egg
1/4 tsp. orange food coloring

To make the filling:

1. In the bowl of a stand mixer fitted with a whip attachment, beat cream cheese and butter on medium speed until smooth, about 3 minutes. Add Splenda monk fruit sweetener and orange zest to the mixture and increase to high speed. Beat, scraping down the sides as needed, until the filling is light and fluffy, about 2 minutes. Cover with plastic wrap and refrigerate until ready to use.

1. Preheat oven to 350 degrees Fahrenheit and line two rimmed baking sheets with parchment paper. In a medium bowl, whisk together almond flour, baking powder, and salt. In a separate large bowl, beat together butter and Splenda monk fruit sweetener until combined. Beat in orange extract, egg, and food coloring until smooth, about 30 seconds. Add flour mixture and fold until just combined.
2. Roll dough into balls about 1 Tbsp. in size. Evenly space dough balls onto prepared baking sheet and press into 1/2" thick disks. Bake, rotating baking sheets halfway through, until edges of cookies are lightly browned, about 12-15 minutes. Let cool for 30 minutes before filling.
3. Place 1/2 Tbsp. of filling on one cookie and top with second cookie, pressing so filling reaches the edges.
