Regal Rosemary is the dried leaves of the
evergreen Rosmarinus officinalis. The
slender, slightly curved leaves resemble
miniature curved pine needles. Normally
hand harvested, the rosemary plant grows
about 2 to 3 feet tall and is very hardy as it
grows under harsh mountainous
conditions. It has a tea-like, pine-woody
aroma and a fresh, bittersweet flavor.
Rosemary is a popular Italian spice used
in lamb, pork, chicken, and rabbit dishes. It
is considered to be the most excellent herb
to
use an accent for poultry and veal. It also
works well with stews and sauces. Regal
Rosemary Leaves should be crushed
