How should I store excess coating?

When finished, turn warmer off and remove can. Cover and store the can of coating at room temperature (this product does not need to be refrigerated). When ready to use again, simply reheat.

Why can this product be used at room temperature, and not the shell coating?

This cone and fruit dip contains different oils than the shell coating, and therefore does not needs a cold surface to harden onto and can be used at room temperature for many applications.

Why does the oil rise to the top of the can?

Oil is less dense, so it will always float to the top. Once the item is heated and stirred, the product will go back to its normal consistency and texture.
