This InterMetro C539-CFC-4 full-size insulated holding/proofing cabinet provides maximum control, convenience, and usability. You'll save energy thanks to its patent-pending insulation technology. It keeps the heat in, and provides a cool- touch exterior.

There are three distinct modules available: combination, holding, and proofing. Each module features an easy-to-read digital thermometer, recessed control dials, and power indicator lights. The combination module allows you to switch instantly between holding and proofing, and has separate controls for temperature and humidity levels. The holding module features analog temperature control and passive humidity generation. The proofing module has individual analog temperature and humidity controls.

Because the C539-CFC-4 prioritizes heat generation over humidity generation, food will stay at the desired temperature, enhancing food safety.

The C539-CFC-4 features clear polycarbonate door, so you can see what's inside without opening it, reducing heat loss.

The C539- CFC-4 has fixed wire slides spaced in 3" increments, and can hold 18" x 26" sheet pans, and 12" x 20" steam table pans.
