How to Sharpen Your Knives

Step 1: Preparing the stone. Place a damp towel on the cutting board and place the stone on the towel. Lubricate the stone with oil or water. Step 2: Finding the angle. Hold the knife at a 90 degree angle. Halve the angle to 45 degrees. Halve the angle again to 22.5 degrees. Step 3: Sharpening. Pull the knife heel to toe. Flip and repeat the same action. Push knife toe to heel. Flip and repeat the same action. Step 4: Using a sharpening steel. Place a damp towel on the cutting board. Place the sharpening steel on the towel. Hold the knife at a 90 degree angle. Halve the angle to 45 degrees. Halve the angle again to 22.5 degrees. Pull the knife heel to toe, alternating sides. Wipe down the blade with a damp towel. The knife is sharpened and ready to cut.

Hold the steel in a near-vertical position with the tip resting on a non-slippery surface. Start with the heel of the knife against one side of the steel. Maintain light pressure while drawing the knife down the shaft of the steel. Continue in a smooth motion. Complete the movement by drawing the knife all the way to the tip. Repeat the action with the blade against the steels other side. Repeat these steps to complete the honing of the knife.

    This is a cheap honing steel that really works. It hones your knife, not sharpen it. Make sure that your knives are not dull as using this won't work.

    This Mercer heavy weight sharpening steel is really nice, and feels like really high quality. The grip is soft and while 10", fits nicely in most kitchen drawers.

    This is a really great sharpening 10 inches sharpening tool which is perfect for my 10 inches chef knive. The hand grip is soft and is non-slip even if you have your hands wet. Love it better than other brands. It allow me to sharpen many knives with out any blisters came out. =)

    I bought this with several knives from the same genesis line. I finally had one dull on me and got around to using this. It did the job. The blade was as sharp as it was new, and it only took seconds. Comfortable grip too.
