It takes a bit of work to prepare fresh jackfruit, but it's worth the effort. Each fruit yields a large amount of flesh and preparing your own jackfruit allows you to process it at your desired level of freshness for best results. Young jackfruit will be green to yellow, while ripe jackfruit will have a deeper yellow color with a pronounced fragrance. Jackfruit contains a significant amount of natural latex, so avoid touching it if you have a latex allergy. Begin by covering your work surfaces with newspaper or another covering to prevent latex damage and coating your knife and hands with oil to avoid getting sticky latex on them. Slice the jackfruit in half, then cut it into workable chunks. Jackfruit is easier to handle after it has been boiled.
