Cipollini onions are smaller and shorter than conventional yellow onions, with a squat stature, light yellow skins, and white flesh. They have a milder flavor than yellow onions, with a pronounced sweetness that makes them ideal for serving on their own. To peel cipollini onions, bring a saucepan of water to a boil, add the onions, and cook for 2 minutes.
