To prepare delicious fried soft-shell crabs, begin by cleaning your crabs. Cut the crab across the front, then lift back the corners of the shell. Remove the gills, apron, and fat from the crab body, then rise with cold water. Pour the J.O. batter into a shallow bowl, then dredge your cleaned crabs, ensuring they are thoroughly coated in batter. Heat your oil in a large fry pan until hot, then add your crabs, cover, and cook thoroughly for approximately 3 minutes on each side. Once they are golden brown and the meat is firm, remove your crabs from the oil, drain, and serve them steaming hot!
