this works very well for making cream of brocolli, spinach, potato or any other type of creamy soup. I love to use this as my base, then flavor with chicken, mushrooms or other vegetables. It's fast, easy and good. A bif help in the kitchen.

Made some great CHEESEBURGER SOUP with this cream soup base in about 15 minutes. Fried some chopped onions, celery and hamburger, added 2 quarts of water to half of the package of soup base along with some American cheese. Flavor was great without additional seasonings. Great!

I bought this for personal use, and found it to be a wonderful flavor enhancing additive for a great pot of soup. It was a bit too rich when used alone with a normally salty meat like crab meat, if used as directed. My first attempt was with Cream of Crab soup. The first batch was far too salty, because of the additional salt contained in the crab meat. With a bit of tweaking however, it turned out absolutely great! I'll share the recipe for anyone wanting to make some. Ingredients: 2 lb Fresh Lump Crab Meat 1/2 lb Unsalted Butter (Must b e unsalted) 1 or 2 sticks of Celery finely diced 1/2 Gallon Whole Milk (not half/half - Using butter) 1/3 Cup All Purpose Flour (Will absorb more salt) 2 tsp Nutmeg 1/2 tsp Allspice 2 tsp Ground White Pepper 2 Tbsp "Old Bay" Seafood Seasoning 2 Cups Chef's Companion Soup Base Pre mix 1/2 of the milk with Chef's Companion soup base while cold and set aside. Melt butter, and sweat celery over medium low heat, being careful not to scorch the butter nor brown the celery. Wisk in flour till smooth and bubbling gently. DO NOT SCORCH! Slowly add milk while continuing to wisk Reserve 1/2 of Old Bay Seasoning for garnish Mix in spices and milk/soup base mixture Continue to heat and wisk until soup reaches desired thickness. More heat may be used, but caution is advised to avoid bottom scorching and sticking. When done, it should be thick enough to suspend meat while standing. If Brandy is desired, add it now (optional) Reduce heat, and gently fold in crab meat, being careful not to break individual lumps if possible, but just enough to separate lumps from each other. Serve with garnish of Old Bay on top (Nutmeg may be substituted), and hot crusty bread slices or crackers. Enjoy the look on your guests faces when they experience this one!

A great cream soup base I use this as the base for all my creamy soups. Makes a great chicken and dumplings adds a nice creamy flavor I wouldn't otherwise get.

Great soup base mix. Used it for Cream of Broccoli soup. Add milk & water. Saves $$ when having to make large quantity of cream based soups.
