Made from a combination of gluten-free flours, starches, and xanthan gum, this product is specifically designed to mimic the performance, elasticity, and flavor of conventional bread flour, but without the gluten. It can be used to make loaves of sandwich bread, dinner rolls, hamburger buns, and even specialty breads like artisan loaves or focaccia! With a wide variety of applications on your menu, this homemade wonderful bread mix is sure to be appreciated by your diet-restricted patrons.

Rather than experimenting with creating your own mix of gluten-free flours and starches to make bread, let the experts at Bob's Red Mill do the hard work for you! This convenient product takes the guesswork out of creating delicious gluten-free bread with a taste and texture that's just as good as the "real" thing. For added convenience, each bag of mix even contains a pre-measured yeast packet. Every 16 oz. bag of mix creates (1) 1.5 lb. loaf of gluten-free bread.

To prepare, add the entire contents of a bag of mix and the yeast packet to a large mixing bowl with 1 1/2 cups of warm water, 1 egg, 3 egg whites, and 1/4 cup of melted, unsalted butter or oil. Using the paddle attachment of your stand mixer, mix on low speed for 2 minutes. Turn off the mixer and scrape down the sides of the bowl with a rubber spatula, then mix on medium speed for 6 minutes more. Transfer your dough to a pre-greased loaf pan and lightly brush the top with oil or melted butter. Cover with plastic wrap and let the bread proof in a warm place until the batter reaches the top of the pan, about 45-60 minutes. Remove the plastic wrap and transfer the pan to an oven preheated to 350 degrees Fahrenheit. Bake the bread until the crust is golden brown and the interior temperature reaches 210 degrees Fahrenheit, about 90 minutes.
