As summer is coming to a close, it is time to celebrate the end of the season by enjoying its best produce. Summer offers a variety of delicious produce, but this recipe highlights my absolute favorites - blueberries and lemons. This refreshingly sweet and light Blueberry Lemon Bread is a perfect beginning or end to any meal in your restaurant or at your catered event. This delicious treat only takes about 15 minutes to prepare and about 55 minutes to bake.
Ingredients:

3 cups all-purpose flour -
1 cup granulated sugar -
4 teaspoons baking powder -
1/2 teaspoon salt -
4 tablespoons chilled butter, cut into thin slices -
1 1/2 cups fresh blueberries (can use frozen during other seasons!) -
Grated rind from 1 lemon -
1 cup milk -
2 eggs, beaten
Directions:
1. Heat oven to 350 degrees F. Lightly coat a 5" x 9" loaf pan with vegetable cooking spray.
2. Combine flour, sugar, baking powder, and salt in a large bowl. Using your fingertips or a pastry blender, work the butter into the dry ingredients until it becomes crumbly. Mix in blueberries and lemon rind. Stir in milk and eggs until well blended.
3. Pour into your pan and bake for 55 minutes, or until a toothpick inserted in the center of the loaf comes out clean. When finished baking, turn the loaf onto a wire rack to cool.
For another tasty and mouth-watering treat, try replacing the lemon rind with orange rind and substitute 1 cup of raspberries for the blueberries!
