The American Metalcraft HCCTP13SP 13" heavy-weight pizza pan is perfect for baking your guests’ favorite pizzas. With twice the perforations as a regular perforated pizza pan, this super perforated pan features (292) perforated holes 3/8" in diameter to quickly cook a crispy crust, while also allowing moisture to escape so your pizza stays fresh longer. This pan features a wide, flat bottom that heats quickly and evenly to thoroughly bake your signature pizza. It’s made of 14 gauge, 1.5 mm aluminum for years of use!
Hard coat anodized pans, like this one, undergo a special electro-chemical process that converts the surface of aluminum into aluminum oxide. This hard finish promotes rapid baking thanks to its dark color, and it will not flake off. It's important to note that it's not non-stick and must be seasoned. Wash and dry the pan thoroughly, wipe oil on the inside and outside surfaces of the pan, and allow to soak in for 30 minutes. Then bake at regular cooking times and temperatures. Do not over bake and do not wash off excess oil, just wipe. The oil residue, and any additional oil added before baking, makes the pan stick resistant. Remember when cleaning hard anodized aluminum, this is considered an amphoteric coating, and will be attacked by solutions of a high alkaline or acidic nature. Do not expose these pans to dishwashers or caustic cleaning solutions. Use detergents made specifically for aluminum.
