As I mentioned last year in my post titled “Cinco de Mayo 2010 – Last Minute Salsa,” Cinco de Mayo in my family is “kind of a big deal.” Alright – It’s a HUGE deal. This year, in keeping with my newfound tradition of expanding our fiesta menu, I’m not only going to partake in the SALZA making that I did last year, but this year I shall also be working on my homemade guacamole skills. This recipe requires only 10 minutes to prepare, requires only 5 ingredients, and is perfect for anything from large family parties to Cinco de Mayo parties at your restaurant, bar, or lounge.
- 3 medium ripe avocados, peeled
- 1/4 cup finely chopped onion
- 1/4 cup minced fresh cilantro
- 2 tablespoons lime juice
- 1/8 teaspoon salt
To prepare this fast, flavorful dip, start by mashing the avocados with a fork in a small mixing bowl. Once fully mashed, stir in the onion, cilantro, lime juice, and salt.
That’s it! All you have to do now is refrigerate until serving and get back to more important business.
When ready to serve, simply serve alongside tortilla chips. Yields 8 (1/4 cup) servings.
