Vollrath Convection Oven Demonstration

This is the 120V oven, a great oven again for caterers, specialty items. It’s very flexible, portable. You can take this and expand menus very easily. It’s a half size oven, so its panels are half size sheet pans. It also handles our cookie sheets. It comes standard with three racks. Now, you hear the fan, and here we couldn’t hear the fan at all. So it’s very quiet. Not a very loud oven. One rule of thumb when you’re cooking with convection heat, you might want to turn the temperature down a little bit from the recipe if you have the recipe for a conventional oven. For convection ovens, typically, you turn the heat down a little bit. The rule of thumb is about 50 degrees, or you can adjust your heat times as well. The broil function on this oven is dependent that you turn off the bake function. So on the bake function dial, you turn it past the highest setting, and you’ll see a little icon on there for the broiler. In order to get the broil function on, you do have to adjust that on the bake thermostat. But this one is dependent on the timer. So I turn the timer off, and it turns off. This one does have, on the timer—if you go past the timer—there is a 100% on. It’s a small specialty oven. We’re going to use it just to expand offerings and be portable and flexible. Okay, so this oven again, perfect for caterers. Here, I’ll just put a couple items in there so that we verify that it does work. I’ve got a couple of small little items that a caterer would use, some quiches, some seafood items, and some fresh rolls that a caterer might use at a satellite cooking station. Say at a restaurant you’ve got a nice little area, like a bake station, and you want to cook the rolls fresh to order. You put some rolls on there and warm them or bake them to order, rather.

    Ordered this because my Avantco oven died after 6 months. This seems to be a much better quality oven, but definitely has some serious hot spots.

    Overall this is a good oven. It does tend to be somewhat uneven, however. My biggest complaint, though, is there is a lightbulb on the inside that blocks a couple rows of space, as well as two knobs that hold the racks to the side that block more rows. This makes it a big pain if you're trying to bake with multiple pans because only about half of the racks will accept pans.

    Purchased this for a contract and the customer loved it! Dependable as anything that is made by this company. They are great product for the money you spend!!

    I purchased the Cayenne half size convection oven to make baking my sugar cookies easier, and it has been an awesome addition to my bakery kitchen. I easily slide three half size sheets in and cut my baking time significantly. I have tried to fit 4 pans in and it is a tight squeeze with the light bulb on the right side. That light bulb also occasionally creates a hot spot that browns the tops of the cookies that are close to it. To counteract that issue I place a strip of cookie dough in that spot on the sheet closest to the bulb and let that absorb the light heat. It's a great little oven and it gets the job done. Also, because it is 120v it does not require any separate wiring like an electric range. Overall I am super happy with this oven. It is easy to use, efficient, has a small footprint and it is a quality machine.
    This oven takes some getting used to. Whoever is saying you can bake/cook on all the racks - can't possibly be cooking food properly. I purchased two of these due to my inspector insisting I needed a hood and vent for baking when I in fact do not. My work around was this oven. The second from the bottom row is the best row to bake. If you use the bottom - not enough air gets under the sheet pan so it's takes forever to bake anything. If you use more that one rack - again - it takes forever to bake anything. Same if you use a rack that's too high up. As others have noted you have to be mindful of the knob on the side and bulb when when using those rows - but again don't use those rows as product just does not cook evenly. You also MUST rotate pans half way through. Again - I have two. The top right corner seems to cook quicker with the back left corner cooking slower. The convection fan is not that powerful which I'm personally a fan of - having too much of a blower if using for delicate items like cheesecakes or key lime pie can be challenging if you have a high far. Also KEY POINT - the knobs on the side basically keep the rack in place. Be VERY mindful of you use too many of the row which could cause you to pull on the rack too hard. The whole thing on both of them come out with my hot sheet pan while I was baking. That was a freaking nightmare. Doesn't matter how tight you think you have it - it's not really staying in there with even a little bit of force - just another reason not to use those rows. Read Less Read More

    BEWARE of this product AND This Company!: This Oven is THE WORST oven I have ever had! It takes almost an hour to reach temperature - The Broil heats but doesn't broil - And lastly this company would not honor my request for a return 3 DAYS after I received it - They said it was under warranty since I used it!!: 'Turned it on'!!!!!! & I had to deal with the manufacturer!!! THE WORST Experience ever with any purchase of any item.....
