What is Artisan Fleurage?
Fleurage is the newest solution provided by Lesaffre for the baking industry as well as for the culinary industry. Fleurage is a concept where Lesaffre developed a pattern and process by infusing ingredients like semolina or seeds with yeast extract. The yeast extract adds to the semolina or the seeds a significant flavor to the finished product.
How is Artisan Fleurage used?
The greatest benefits of using Fleurage is the simplicity. It is very easy to use. Currently, it Lesaffre has two solutions with Fleurage. Fleurage seeds, a combination of millet, flax seeds, and sesame seeds, which is infused with the yeast extract which provides a little bit of a salty umami. The Fleurage semolina is also infused with yeast extract, but the umami is more like a cheese flavor, suitable for vegan products like vegan pizza, vegan buns, cheese buns, or vegan cheese breads as an example. By adding the semolina, as you see here, for example, with the pizza, it enhances the flavor as well as the visual appearance of the product. It also provides a crispiness to the finished product. Fleurage is not only clean label and non-GMO, but it is also vegan-friendly.
