I use the victorinox 10" cimeter knife to break down game and livestock for the freezer. I find myself using it to cut salmon steaks on our annual salmon trip. Great knife.

Great knife for cutting steaks by hand. I would suggest throwing about the cover, we have stopped more than one cook from putting a dirty knife in it - just eliminate the possibility.

I do a large majority of our 'in home' butchering. I have been wanting a knife like this for quite some time. Having found this website I was impressed with the cost and quality of the product. Have used this knife several times already and am very pleased with it. The only negative (and a small one) I would have to give is the site does not offer a "knife guard" for this particular style of knife, at least I could not find one. I will be purchasing more products from this site as needed.

This is a high quality knife. I use it for butchery and the edge is very easy to maintain. I use it a lot for breaking down large cuts of meat and portioning out steaks. Would definitely buy again. Becoming a huge fan of Victorinox knives and small wares.

This is a great knife for cutting steaks with. The edge is razor sharp and will stay that way for a long time. What deal it is on Webstaurant you look at other websites and you'll pay almost twice as much.

This is a VERY sharp knife. I have had it for 2 years and never needed to have it sharpened. It cuts through ham roast beef and turkey with ease. I highly recommend this knife!
