I grew up eating Farmers Cheese from a different company. This brand is very similar to what I remember, except it isn't quite as sour nor exactly the same texture. This is a bit softer and more dense. It's more like a Monterrey Jack consistency while the one from my childhood was firmer and had little holes throughout the wheel of cheese. That said, this is a wonderful cheese to top casseroles. It melts easy and fast and has a nice mild creamy flavor. It's also great sliced on sandwiches. It will grate when very cold but seems a bit too soft grated to top a salad.
