How to Cook a Duck Breast

Today, we're going to show you how to properly cook a duck breast. By doing this, you can eliminate 70% of the fat and still have the delicious, crisp skin that adds to the flavor of your meat. The secret is to score the skin and saute the breast skin-side down over low heat so the fat has the chance to render or melt out of the skin.

First, make sure to thaw the duck breast and remove it from the package. Pat your duck breast dry with a paper towel. Score the skin into 1/4" intervals and be careful not to cut into the breast meat. Rotate the breast and score it again, making a crisscross pattern. Season with salt and pepper or your preferred seasoning or marinade.

Preheat a griddle to 325 degrees Fahrenheit, or a non-stick pan to low/medium-low. Place your breast skin-side down and cook for 8 - 12 minutes or until the fat is rendered and the skin is crisp and brown. Remember, low and slow is the way to go! Turn the breast over and cook 1-2 more minutes on the other side.

At this point, the breast can be refrigerated and finished at a later time if you choose. To finish the duck breast, place it in the 350 degree Fahrenheit oven for 5-6 minutes or until the internal temperature reaches 155 degrees Fahrenheit. Let the duck breast rest 4 - 5 minutes before slicing. The temperature will continue to rise during the resting period and should reach 165 degrees Fahrenheit.

The final cooking times may vary with the size of the breast, but a properly cooked duck breast will still be pink in the middle. Now that your duck breast is finished, slice on the diagonal and it's ready to use in a variety of dishes!
