How To Program A Hatco Thermo-Finisher

The Hatco Thermo-Finisher is a revolutionary product designed to rapidly heat or thermalize a wide range of food products. This allows you to serve more customers in less time. With its quick-heating infrared ribbon elements and microprocessor controls, the Thermo-Finisher is ideal for melting toppings, toasting buns, finishing soups, or preparing a variety of entrees. It can also be used to quickly thermalize a wide variety of frozen and fresh foods, such as French fries, appetizers, pizza, and potato skins. By following some simple programming steps, anyone can quickly and easily prepare menu items that your customers will enjoy. Most models have both upper and lower heating elements. The upper elements heat the food product from above, and the lower elements heat the product, plate, or pan from below. Five programmable button selections allow you to precisely control the radiant heat output and heating time for specific menu items. Begin by plugging the unit into an electrical outlet of the correct voltage, size, and plug configuration. Turn the power switch to the “on” position. You will hear a loud beep as the unit goes into its preheat mode. The digital display will show “stand by.” After one minute and ten seconds, the preheat cycle will be completed, and the unit will be in the “ready” mode. You may now begin programming your five menu items. Push and hold one of the five program selection buttons while you push and hold the enter button. Hold both buttons for five seconds or until the upper heat indicator light stays on and the unit display the letter “P,” power percentage, followed by 2 or 3 numbers. To program the upper power value, press the up or down arrow key until you reach your desired setting. Each time you press one of the arrow keys, the power value changes by five percent. Power values range from five to one hundred percent. When you’ve reached your desired setting, press enter. The unit will display the letter “T” for time, followed by three numbers. Now, program the amount of time that the upper heating element will stay on. Press the up or down arrow key until you reach your desired setting. Each time you press one of the arrow keys, the time will change by 1 second. Holding down an arrow key will cause the numbers to change rapidly. The time can be adjusted from 0-9:59. When you’ve reached your desired thermalizing time, press the enter key. The unit will again display the letter “P,” followed by 2 or 3 numbers, and the lower heat indicator light will stay on. Now, program the power value of the lower heating element. Press the up or down arrow keys until you reach the desired setting. Then, press the enter key. The unit will again display the letter “T,” followed by 3 numbers, and the lower heat indicator will be lit. Now, program the time that the lower heating element will stay on. Press the up or down arrow keys until you reach the desired setting, and again, press the enter key. Now that you’ve entered the power and time for both the upper and lower heating elements, press your program selection button again to enter all of your settings into memory. The display will show “ready.” It is a good idea to use a grease pencil or china marker to record the menu item on the control panel next to the selected program button. Note that during programming, if no adjustments are made within 15 seconds, the controller will automatically revert to the “ready” mode, and no changes will be accepted. Also note that if you press the program selection button after this 15 second interval, the unit will be taken out of the programming mode without accepting any changes. Once entered into memory, selections will be saved even if the unit is turned off or unplugged. In addition to programming your selections, you must also program the “idle” and “auto-off” modes. Once your unit reaches the ready mode, the upper heating elements will automatically go into a programmed idle power setting. The display will continue to show “ready” when the unit is in the idle mode. We suggest that you verify that the idle power value is preset to 30%. If not, set the “idle” mode power value to 30% by pressing and holding both the up arrow key and the enter key for 3 seconds. The display will show the current programmed power value. Adjust the “idle” mode by pressing either the up or down arrows until you reach the desired setting. Each time you push an arrow the number will change by 10. Push the enter button a second time. You have now programmed the “idle” mode. A special energy saving features allows your Thermo-Finisher to turn off all elements if the unit has not been used for a specific length of time. This can be set in one minute increments from 1-60 minutes. The unit can also be programmed to never shut off by itself. To change the “auto-off” mode to a new setting, make sure the unit is in the “ready” mode. Then, press the down arrow key while at the same time pressing the enter button. Hold both buttons for three seconds. The display will show the current programmed auto-off value. To adjust the auto-off time, press the up or down arrow key until you reach your desired setting. If you want the unit to never shut off, set the time to zero. Once you’ve selected your auto-off time, press the enter button a second time. If the unit has not been used for your programmed amount of time, the unit will automatically turn off and the display will show “off.” After plugging it in and turning the switch on, the unit will automatically go into preheat mode and the display will read “stand by.” If the display shows “off,” press one of the five product selection keys to put the unit into the preheat mode. To prevent over-cooking, never place food items on the metal rack during preheat mode. Once the unit has reached the proper temperature, “ready” will appear on the display. Slide your plate or pan to the center of the rack. Press the appropriate program selection button. The unit will beep, the button will light up, and the display will begin counting down the programmed finishing time. If you make an incorrect selection, cancel by pressing any of the buttons on the display panel, and restart by pressing the correct program selection button. Finishing is complete when the display flashes “done,” the program selection lights flash, and the unit beeps for five seconds. To cancel the beeping sound before five seconds are up, press any of the buttons on the control panel. Carefully remove the food product using oven mitts, a pan gripper, or other heat retardant device. Never remove product with bare hands. As soon as the unit returns to the “ready” mode, another food item can be processed. Program settings will vary based on the Thermo-Finisher model and the food product used. Start by reviewing the recommended food finishing guide found in the Thermo-Finisher installation and operating manual. This guide lists the power and time values for many popular food products. If the food product that you’re using is not listed in the guide, a good rule of thumb to use to start programming is to divide conventional cooking time by 3. Use the resulting number as your total cooking time. Set upper and lower power values to 50%, then test and adjust as necessary. When performing product testing, run three programs with the settings in succession. Adjust the program accordingly to achieve optimum product temperature. On menu items in which internal temperatures are critical, such as chicken or pork, the lower power value should always be greater than the upper power value. On menu items in which the surface temperatures are critical, such as cheese melting, the power percentage should be increased and the time decreased. When melting, browning, or toasting items, the upper power percentage should be greater than the lower power percentage.

Unlike a conventional oven that cooks by heating the air inside of the cabinet, the thermo-finisher heats food by emitting infrared energy from the top and bottom of the unit’s interior. By absorbing this energy, the food becomes hot and cooks. Because of this, the internal temperature of the cabinet is not critical, unlike in other ovens.
