Well obviously Ghirardelli has the best chocolate ever. These wafers are high quality and they melted quickly and even when curdled, when the temp of the chocolate was lowered it came right back.
Great quality chocolate, not too sweet. I've used it in all sorts of baked goods, as well as for truffles and molded chocolates. Note that this is 'pure' chocolate, with cocoa butter- it does need to be tempered to keep a perfect smooth texture.

I run a very small bakery/dessert business and have experimented with a lot of different chocolates. I always end up using the Ghirardelli bars found in grocery stores or World Market. This gets expensive, so I was so happy to find that I could order the wafers in bulk. These wafers are the perfect combination of flavors -- bittersweet is too bitter and semi sweet is too sweet. With the Queen Dark, I no longer have to mix two chocolates for one recipe. And the wafers are sooooo much easier to use than chopping the bars. They arrived in perfect condition with ice packs to help keep them from melting during shipping.
We now only use Ghirardelli chocolate in all of our bakeries and restaurants. It has become a staple in our kitchens. These are great to have!
Ghiradelli Queen Dark (and Stanford Milk) chocolates are superior products. Both of these melt with ease and are easy to temper for molded chocolates. They are also great to use in ganache recipes!

This chocolate is perfect for making my chocolate desserts and sauces. I make a great ganache also with this wafer. I love it and will be buying more
These wafers melt beautifully and have a lovely rich, dark chocolate flavor. The chocolate does not set up well for dipped cookies or macaroons. It remains soft but perhaps it was my melting method. Regardless, it will be a nice addition to many chocolate recipes.
