Filtration. The first step in filtration is to prepare the pan. Open the cabinet and pull the filter pan from the fryer. It can be lifted from the cradle for cleaning. Remove the components and clear them of all debris, ensure no water is left in the filter pan. Reassemble the pan in this order: filter screen, it rests on pins on the bottom of the filter pan. The filter paper rests on top of the screen, lapping on the wall of the filter pan. This creates a seal under the hold down crate. Add one pack of the filter powder. Be sure to check the O-rings on the filter pan pick up tube; it must be present and in good condition for the filter system to operate properly. Replace the crumb basket and close the filter door, ensuring the pickup tube is fully seated. Turn the computer on, the fryer must be at operating temperature for filtration. If not prepared immediately before filtration, make sure the filter pan is ready. Remove large debris from the oil. Turn the fryer off, open the drain valve, the oil flows from the fry pot to the filter pan. Remove the basket rack and raise the elements. Turn the filter pump on, leave the drain valve open, the oil is pumped from the filter pan to the fry pot and through the open drain. Flushing debris through the fry pot as it flows. If the drain valve becomes clogged, turn the filter pump off and use the fryer’s thread to dislodge debris from the valve. Be careful not to damage the interior of the drain valve with the fryer’s thread. Use caution, and wear protective gear. The oil is very hot and can cause serious injury. With the oil flowing, a brush can be used to clean the fry pot, again, use caution and wear protective clothing. After 5 minutes, close the drain valve, leave the filter pump on, and the fry pot will fill. As the filter pan is entered with oil, air bubbles will form in the filling fry pot. Allow the bubbles to form for 10-15 seconds before shutting off the filter pump. This helps clear the return lines of oil. Turn the fryer on, and allow it to return to operating temperature.

Remove the filter pan. Remove the crumb tray, the hold-down ring, the filter paper. Remove the inner screen. Clean the pan and all the components. Replace the inner screen. Wrap the filter paper around the hold-down ring and lower it into the pan, ensuring the excess paper laps onto the wall of the pan. Add a packet of filter powder to the filter paper. Return the crumb tray and position he filter pan in the fryer.

For high-volume frying applications, the Frymaster FPRE417TC-SD high efficiency floor fryer with (4) 50 lb. full frypots and CM3.5 controls is the perfect choice. The proprietary design of the long-life elements along with the precise controls ensures top efficiency ratings, while the thermostat, mounted directly on the elements, ensures accurate temperature readings and extended oil life. Equipped with pinpoint accurate CM3.5 controls, this unit maintains accurate oil temperatures at all times and even adjusts cook times for consistent, high-quality food products every time.

The four frypot design allows you to easily cook different foods at the same time with only one fryer. Since this unit comes with (8) twin fry baskets, two for each frypot, you can quickly cook portions of your customers' favorite fried foods. The frypots are insulated to help retain oil temperature and reduce standby energy consumption. Plus, they are made of durable stainless steel to resist corrosion and make cleaning easier. The large cold zones and forward sloping bottoms help to collect and remove sediment from the frypots, and a rear flush feature moves sediment toward the front 1 1/4" IPS full port drains for thorough removal.

The fryer cabinet is made of durable painted carbon steel and houses the built-in fryer oil filtration system. This filtration system saves space since it is built into the fryer's cabinet base, yet still has a large capacity filter pan. This filter pan can be easily removed for cleaning and is designed to rest on rails to leave sufficient clearance for floor mats. The sloped drain pan leaves minimal residual oil behind after filtering to reduce waste, and the large 3" drain lets the oil flow freely so that filtration takes as little time as possible.

A single filter cycle can take as little as 5 minutes. Plus, you can filter the oil from one frypot while still using the others so that you don't need to take your fryer completely out of service to run the filtration cycle. The filtration system features a 1/3 hp motor and a 4 gpm pump. For greater convenience, this oil filtration system comes complete with a stainless steel crumb catcher for sediment disposal and a filter starter kit. It requires a 240V, 1 phase electrical connection.
