Fry station management boil out procedure. Before starting any fryer oil station management tasks, it is important to wear the appropriate safety equipment. Thermal apron, eye protection, and thermal gloves. Many people ask how often the fryer should be boiled out. The answer is when residue builds up that cannot be removed with routine daily cleaning. A convenient time to boil out is after the oil has been disposed of. To begin disposing of the oil, turn the fryer off, wait for the oil to cool to at least 120 degrees Fahrenheit. If the fryer has built in filtration, the next step would be to remove the filter pan as the filter pan is not designed to transport oil for disposal. In this case, we are demonstrating oil disposal on a fryer without built-in filtration. After the fire has been turned off, attach the drain extension pipe and remove the basket rack. Next, position the oil disposal unit under the drain pipe and open the drain valve. While the oil is draining, use a brush to encourage crumbs into the drain. When the front pot is empty, close the drain valve. Pull the disposal unit away from the train pipe. Empty the crumb tray into a heat resistant container and securely fasten the container's lid. The used oil can now be transported safely to a heat-resistant, oil-disposal container that is approved for used oil disposal. After the used oil is disposed, the front pot is ready to be boiled out. Be sure that if the fire has built-in filtration, the filter pan is safely out of the way so that the water used for boil out is not accidentally run through the pot. Place an empty bucket suitable to catch wash water under the drain. Open the drain valve rinse the fryer thoroughly with hot water until all crumbs are gone, then close the valve. Be careful not to overfill the bucket. Take the rinse water to the drain and discard. Next, fill the fryer to the upper fill line with hot water. Frymaster recommends stera-sheen red label fryer cleaner. Add the prescribed amount of a good commercial cleaner designed for cleaning deep fat fryers following the manufacturer's instructions for use. Gently mix the solution with a long handled, nylon brush until detergent is dissolved. Scrub the back surfaces and heating elements for two minutes to loosen hardened residue. Submerge dirty fry basket rack, fryer baskets and any other fryer tools in the solution. Set the fryer temperature to 190 degrees Fahrenheit and turn the fryer on. If the fryer has an automatic boil-out feature, initiate the boil out. Boil-out should be done for 30-120 minutes depending on the condition of the fry pot. Do not leave the fryer during the boil out and do not let the solution boil over When the boil-out cycle is complete, remove any soaking items in the solution. Take them to a sink for rinsing and drying. Open drain valve and drain half of the solution from the vat into an empty heat-resistant bucket. Then take the solution to the drain and discard. This step may require filling the bucket more than once. Use a non-metallic scrub pad and a long handled nylon brush to clean all the exposed and loosened residue. If needed, use a plastic scraper to remove any resistant residue. When all residue is removed, drain remaining solution into the bucket and discard. Use scrub pad and brush to clean the bottom half of the fry pot. After all the residue is removed, take the brush to the sink and rinse with water. Place the bucket under the drain pipe, use water and brush to wash the residue detergent from the fry pot, being careful not to overfill the bucket. Then close the drain valve. Completely dry the fry pot with dry rags or in this case paper towels. Or let air dry overnight. Replace the fry basket rack. The fry pot is now ready to be filled with fresh oil.
