- What's the difference between a riveted and a welded handle?
- A riveted handle is connected by small metal pieces (called rivets) that are crushed between the handle and the pan body to attach them together. This type of handle is more common on copper and aluminum cookware.
For a handle to be welded, the metal must first be melted and then adhered to the pan body. This creates a strong bond that leaves little to no space in between, so bacteria and other food crumbs can’t collect and cause sanitation issues. Both are long lasting solutions for fry and sauce pan handles because they are durable and can withstand heat.
- My item arrived coated with a thin layer of oil. What is this oil for, and is it ready for immediate use?
- Some carbon steel pans and woks are shipped with a protective oil coating from the factory to prevent them from rusting before their first use. They must be thoroughly washed with warm soapy water to remove all traces of the oil, and then properly seasoned before use.

If you use gas heat, skip to the end and buy one of these. They season beautifully and are the right balance of lightweight and sturdy. If you use a smooth glass rangetop, it could be an issue. The pan I got warped ever so slightly during seasoning so that it now only rests on the glass at the very center. This causes the middle of the pan to heat far more than the rest. We're talking 1mm or less. On a gas range it would not even be noticeable, but on a glass cooktop it is. It doesn't stop me from trying to use it cause the pan is great.

We purchased these pans to use on our new induction cooktop. Definitely go through the process of seasoning them and clean them right away after use. Drying them is also important so they don't rust anywhere. If they start looking 'dry' again I go through the seasoning process again.

If you know what you are buying, this is a great product. It needs to be cared for and re-seasoned often, but that's what carbon steel pans need. Sometimes that is a hassle, but the cooking is easy with this light nonstick seasoned surface once you get the hang of it. This pan is also huge, so it can make a dish for the whole family. The handle bends a little when the pan is full and heavy, so you have to be careful with that and hold it with a pot holder by the sides.

I was not happy with this product. I through it out after a couple of uses. Did not season well. My recommendation is not to buy.

Not a bad pan. They look nice and heat pretty evenly but I have noticed that the handle has bent over time. Because of its own weight plus whatever is in the pan, I would advise to be aware of the handle seam.

the handle looks a bit flimsy that I feel I shouldn't hold it just with the handle. It is a deep pan, so it is nice to make some fried rice or paella.

While one of my favorite TV cooking shows has always touted the greatness and non-stick qualities of cast iron, the show almost always uses the famous chemically-bonded non-stick *stuff* skillets. I've got a real nice one, but it's really starting to wear down, and I HATE even turning on heat under it, let alone put it in the oven "up to" 350 degrees. NO WAY. I do love my cast iron. Now, that same show reviewed carbon steel skillets and they looked amazing. I ordered a large one, seasoned it on the grill and then fried a pound of bacon in it. The seasoning does not look very pretty, but it sure does work. The pan I bought is a bit large, although it will work great for bigger dishes, so I just ordered a smaller model to go with it. Can't wait to season it and use it. I truly don't understand why anyone would buy that "black chemical" cookware anymore, especially the cheap stuff. It's unnecessary, and what did people do before they invented it? They used these. The old pans will go on the hanging pan rack, but only for looks. I'll never use them again. Also, Webstaurant Store was great, as always.

Great frying pan for am amazing price. This pan size is great for any big family or someone that likes to make alot of left over for the next few days. High quality and cheap a must buy.

Fast shipping, arrived in great condition After seasoning turned out nice and slick, shiny and black. With the seasoning, turned out pretty stick resistant. This 12 inch model works great for bacon or cooking multiple items in the same pan - including multiple chicken thighs. Only thing I'm worried about is the handle - welds seem solid, but flexes just a bit when the pan is loaded up - although not enough to worry about.
