It will reduce shrinkage by 15-20% due to its slow cooking at up to 350 degrees Fahrenheit, which also improves the taste and overall quality of your food. Customize and monitor the progress of your meals and bulk food items with the easy-to-read and easy-to-use solid state electronic controls, LED digital display, and thermometer. As an upgraded deluxe model, this unit boasts deluxe controls, which include the ability to program up to 18 menus. A 6" meat probe is also included. Designed to accommodate up to 300 lb. of meat, this full height cook and hold oven will save you time and precious kitchen space.

For a variety of cooking and holding options, this model comes equipped with the renowned AquaTemp system. This technology maintains a balance of humidity and temperature for optimum food texture. It continuously monitors the temperature and humidity, and you can adjust both through use of the controller. It uses an 1850W water heater with a separate control, an automatic water fill system, a low water indicator, and an auto shut-off for safety when the water reaches critically low levels.

The oven's frame and interior are made of stainless steel, with coved corners to prevent food particle build-up. To make it easy for your staff to load and unload food pans, each compartment comes with 6 sets of chrome plated wire universal angles. The angles can accommodate 22" x 20" pans, 10" x 20" pans, full size steam table pans, full size sheet pans, and even 14" x 18" service trays. The body of the oven is made of a durable stainless steel and is fully insulated. For your convenience, the doors come outfitted with a silicone gasket for a tight seal and with a high temperature, ceramic, magnetic latch that is easy to open, but provides a secure closure. Plus, this latch is antimicrobial, which helps to fortify your kitchen environment against germs.

To make installation and transportation easy, this cook and hold oven comes with 4 heavy-duty 5" casters to enable mobility, and field reversible doors for versatility. Because the unit does not need to be placed under a ventilation hood in most locations, you can even install the oven wherever it will serve you best. A 208V, 1 phase electrical connection is required for operation.
